Black Eyed Peas have always been a part of our New Years Day Meal. They are said to bring you good luck in the coming year. We had baked chicken, green beans, homemade rolls, mashed potatoes and gravy and fried okra. YUM!
For Dessert we had Apple Pudding cake. The picture looks like chunky meat loaf, but it is really tasty!
APPLE PUDDING CAKE
Cream 2 cups sugar and 1/2 cup butter. Add 2 eggs, mix well.
Chop 6 medium apples and add to mixture, mix well.
2 cups flour
2 tsp baking soda
2 tsp cinnamon
pinch of salt
1 cup chopped nuts ~ optional (we did not add the nuts to ours)
Add to mixture and mix well. Bake for 30 ~ 35 minutes at 350.
Place in a greased 13 x 9 pan.
SAUCE
1/4 cup butter
1/2 cup sugar
1 tsp vanilla
1/2 cup sweet cream
1/2 cup brown sugar
mix and bring to a boil.
Sauce is best when warm and drizzled over apple pudding cake.
