Award for the best pea salad



FROZEN PEA SALAD

2 pkgs frozen peas (don't cook)
1 cup sliced water chestnuts rinsed and drained
1~ 4oz can cashews
1/2 lb bacon ~ crumbled
1 cup sliced green onions
ranch dressing to taste or as desired
(we use Litehouse Homestyle Ranch)

Mix all ingredients together in large bowl. Coat with ranch dressing as desired.Cover and refrigerate until ready to serve.


Recently while at our family reunion Kathy was awarded the prize for best pea salad. We thought that we would share the recipe so you can try it for yourself, and for those who asked for it at the reunion. Kathy also made a Broccoli Bacon Salad that was my favorite. The recipe is below. ENJOY!!!


BROCCOLI BACON SALAD

1 clove garlic ~ minced
1/4 cup low fat mayonnaise
1/4 cup reduced fat sour cream
2 teaspoons cider vinegar
1 teaspoon sugar
4 cups finely chopped broccoli crowns
1 8oz can sliced water chestnuts,rinsed and chopped
3 ~4 slices cooked bacon ~ crumbled
3 tablespoons dried cranberries
freshly ground pepper to taste

Whisk garlic, mayonnaise,sour cream,vinegar and sugar in a large bowl. Add broccoli,water chestnuts,bacon,cranberries and pepper; stir to coat with dressing. Cover and refrigerate until ready to serve.
